Red potato salad

I’ve been making potato salad recipes for years and this is by far my favorite. Such a creamy and delicious recipe to share with others. This sweet potato salad recipe is perfect for summer barbecues and family gatherings. Serve this delicious side dish with BBQ steaks, burgers, and hot dogs. Also a perfect home-cooked meal.

This sweet potato salad is super delicious with soft, creamy red-skinned potatoes cut into bite-sized pieces, dill pickles, chopped hard-boiled eggs and delicious red onions, all combined in this classic potato Salad recipes.

Using red potatoes in this salad definitely changes the texture. The creaminess and flavor combine with the other ingredients to give this potato salad its best flavor. All in all, these ingredients play an important role in this recipe, complementing each other and making it one of our all-time favorite potato salads.

Red potato salad simple ingredients

  • 5 pounds red potatoes, halved
  • ½ cups mayonnaise
  • 2 celery ribs, chopped
  • 1 small yellow onion, chopped
  • ¼ cup sweet
  • 2 tablespoons dried parsley
  • 2 teaspoons yellow mustard
  • 3 tablespoons sugar
  • 1 teaspoon apple cider vinegar
  • Salt and pepper

How to make red potato salad

Combine mayonnaise, extra virgin olive oil, Dijon mustard, red or white wine vinegar, salt and pepper in a bowl. I love the fat combination here, the fruity and aroma of the olive oil and the creamy classic taste of the mayonnaise. It’s so much better than mayo sauce. I think red or white wine vinegar is by far the best acid, but champagne, sherry, and apple cider vinegar will work too. Whisk it together until creamy and smooth.

Cut (or dice) some red potatoes and place in a large saucepan. How I cut them is entirely up to my mood, both work great. Cover potatoes completely with cold water. Next, add a few tablespoons of salt to the water. I know this may seem like a lot of salt, but the potatoes only absorb a small amount of water and it helps flavor the potatoes “from the inside”. Bring the potatoes to a boil over high heat. It depends on how you cut them, but about 5 minutes after the water boils or until fork tender. Then drain them in a colander and let them sit for a few minutes to let some steam escape.

While the potatoes are still hot, toss with the dressing, then add the chopped celery, green onions, and chives. You can warm or cool it for a few hours before enjoying.

What makes this recipe the best

Season the water – Season the boiling water generously with salt, as you do when making pasta, letting the salt seep into the potatoes. This is great because it flavors the inside of the potato. It tastes so much better.

Amazing dressing – we made a quick homemade dressing with a great balance of creaminess and flavor. It’s delicious!

Fresh herbs and vegetables add crunch and texture – since potatoes are so bland, it’s important to add other ingredients to taste. Celery chunks, scallions, chives and more add an absolutely mouthwatering texture and flavor.

For this recipe, it’s best to cook the potatoes in half and then wait for them to cool before dicing. Attempting to cut hot potatoes can result in a mess.

Are the sweet potatoes cooked whole or sliced? You can cook the potatoes whole or cut into chunks, but the process will be faster if you slice them thinly.
